Arriving in the United States at a young age, Santo Selvaggio was introduced to the restaurant business early on. When he was 16, he began working for his brother, Piero Selvaggio, who is known as a pioneer of Italian restaurants.

 

Santo joined Piero at his renowned establishment, Valentino in Santa Monica, which has been serving the highest level of Italian cuisine since 1972. Santo began his employment at Valentino first as a busser, quickly moving on to be a server, and ultimately becoming manager at his brother's restaurant, which in time led to also managing Valentino Las Vegas. Later, Santo turned his attention oversees when he joined the Edwardian Hotel Group in London, England as both a restaurant manager and food and beverage director.

 

After spending several years abroad, Santo returned to the United States and assisted with opening several restaurants and working with many prolific restaurateurs, including Chef Gino Angellini. Moving on to become general manager at Riviera Restaurant in Calabasas, Santo was an integral part in developing it into one of the top restaurants in the San Fernando Valley. Following the trend of exhibiting exceptional
managerial ability, Santo became general manager at Ca' Del Sole, and was trusted to help revise and improve the famous Italian restaurant.
